Ingredients
For the Dough:
300ml full-fat milk, plus 2 tbsp more for glazing
50g unsalted butter
500g bread flour
1 tsp salt
75g caster sugar
1 tbsp sunflower oil
7g sachet fast-action or easy-blend yeast
1 egg, beaten
75g sultanas
50g mixed peel
Zest of 1 orange
1 apple (peeled, cored, and finely chopped)
1 tsp ground cinnamon
For the Cross:
75g plain flour, plus extra for dusting
For the Glaze:
3 tbsp apricot jam
Method
Making the Dough
Begin by heating the milk in a pan until boiling. Once boiled, remove from heat and add the butter. Allow it to cool for 3-5 minutes.
In a mixing bowl, combine the flour, salt, caster sugar, and yeast. Create a well in the center and pour in the warm milk-butter mixture and beaten egg. Stir until a sticky dough forms.
Transfer the dough to a lightly floured surface. Knead for about 5 minutes until it becomes smooth and elastic. Place it in an oiled bowl, cover with oiled cling film, and let it rise in a warm place for about 1 hour or until it doubles in size.
After the dough has risen, add the sultanas, mixed peel, orange zest, chopped apple, and ground cinnamon. Knead well to distribute these ingredients evenly throughout the dough. Cover again with oiled cling film and let rise for another hour.
Once risen, divide the dough into 15 equal pieces. Shape each into a smooth ball. Arrange them on baking trays lined with parchment paper, leaving space for expansion. Cover them with a clean tea towel and let rest for another hour.
Preheat the oven to 220°C (200°C fan). Prepare the cross by mixing the plain flour with enough water (around 5 tbsp) to create a thick paste. Pipe this paste onto the buns to form crosses.
Bake the buns in the preheated oven for 20 minutes or until they turn golden brown.
While the buns are baking, gently heat the apricot jam until it's melted. Sieve to remove any lumps, then brush the warm buns with the melted jam glaze.
Note: These buns can be frozen, making them perfect for a midday snack during the Easter celebrations.
